Ingredients:
Starchy potatoes (Russet, Kennebec, Idaho)
Fryer oil
Salt
Instructions:
Peel potatoes if needed
Use a mandolin or dicer to cut potatoes
Hold potatoes in white vinegar and water until use
Dry and blanch fry at 325 F for 10 minutes
lay out to drain on Sheet try and refridgerate
Heat oil to 350F, and fry for a second time until crisp
Remove and salt
