Why it works: Starchy potatoes, Blanch fry, Dehydrate, Final Fry, (BEEF TALO)

Equipment:

  • Fryer


Ingredients:

  • Starchy potatoes (Russet, Kennebec, Idaho)

  • Fryer oil

  • Salt


Instructions:

  • Peel potatoes if needed

  • Use a mandolin or dicer to cut potatoes

  • Hold potatoes in white vinegar and water until use

  • Dry and blanch fry at 325 F for 10 minutes

  • lay out to drain on Sheet try and refridgerate

  • Heat oil to 350F, and fry for a second time until crisp

  • Remove and salt
