Potato Apple Tacos

Ingredients:

  • russet potatoes

  • poblano

  • sweet apples

  • flour tortilla

  • avacado

  • Avacado oil

  • Mexican spice

  • Salt



Instructions:

  1. Peel and dice potatoes into a small dice.

  2. Peel and dice apples half the size of potatoes, soak in lemon water

  3. Slice avacados

  4. Simmer in salted water until fork tender

  5. Dry on a rack, preheat griddle to high heat and avocado oil

  6. Coat potatoes with Mexican spice

  7. Add potatoes to griddle and allow them to brown.

  8. Flip when potatoes release. Drain on rack

  9. Heat tortillas,
