Ingredients:

  • Green Tomatoes

  • Buttermilk

  • Dredge

    • Panko and

    • dried basil

    • cayenne

    • garlic powder

Instructions:

  1. Cut top and bottom of tomatoes off. Slice remaining tomato into 1cm slices. This allows enough room for breading to increase width to 1.5cm.

  2. Soak tomato slices buttermilk marinade for 30 minutes to 1 hour (longer by breakdown the tomatoes into being too soft.)

  3. Mix panko with dried basil, cayenne, garlic powder, salt and white pepper. Taste, make sure it is savory and salty enough.

  4. Coat, and rest on a wire rack in the frig for at least 30 minutes

  5. Freeze or Fry.

  6. Fry at 350F until golden brown.
