Gyoza with Skirt (or Wings)

Lace, Skirt, Wings, whatever you call it, the extra crunch is a pleasant addition.

Why it works:

Yield: 1 serving

Time: 20 minutes

Pairing: soy and black vinegar sauce

Equipment:

  • non-stick skillet

  • digital scale

  • measure cup

  • chopsticks


Ingredients:

  • 80 grams cold water

  • 4 grams ap flour

  • 4 grams corn starch

  • 2 grams salt

Instructions:

  1. Brown dumplings with flat side down

  2. Once Crisp on bottom add Slurry mixture and cover

  3. Once you hear the water gone, remove cover, turn dumplings on side, and leave on low to develop crispy lace.
