Honey pancakes filled with red bean paste. From the Teaching Kitchen, taught by Chef Instructor Zach Heller. Recipe by Namiko Hirasawa Chen.

Makes 4 sandwiches
Ingredients
- 3 eggs
- 105 g granulated sugar
- 1½ Tbsp honey
- 1 cup all purpose flour
- ¾ tsp baking powder
- 1–1½ Tbsp water
- Neutral oil or butter, for greasing pan
- 4 oz red bean paste
Instructions
- Combine eggs, sugar, and honey in a large bowl. Whisk until light and fluffy.
- Sift in flour and baking powder, whisk until just combined.
- Refrigerate for 15 minutes.
- Remove from refrigerator and whisk in 1 Tbsp of water and mix. The consistency should be like pancake batter (can run, but not liquid). Add the rest of the water if necessary.
- Heat a griddle or nonstick frying pan over medium-low heat. Grease the pan, and use a ladle to scoop about 3 Tbsp of batter for each pancake. They will spread, so don't overcrowd too much. They should be about 3in in diameter each, and you should get 8 total out of the batter.
- When you see bubbles over the surface of the pancake, and the edges beginning to dry, flip and cook on the second side, they go quick about 1-1.5 minutes per side.
- Re-grease the pan between batches and continue cooking until the batter is used.
- When the pancakes are ready, sandwich two of them together with red bean paste.
- Enjoy as is, or sprinkled with powdered sugar.
