Poison Apple Popping Wings

A Halloween wing that crackles: glass-crisp wings lacquered in a sticky, tart caramel apple glaze, then showered with Pop Rocks and crushed sour apple candy right before serving. Sour, then sweet, then it pops.
Why It Works
Baking powder raises the skin's pH so it blisters and crisps like fried. Reducing the cider concentrates real apple flavor into the caramel, and the malic acid gives the sour green-apple pucker that balances all that sugar.
Notes
Starter recipe; adjust to taste. Pop Rocks dissolve in anything wet or hot, so the glaze must be tacky and the candy goes on last. Never toss them in the bowl. The crushed sour candy keeps the crunch going after the popping fades. Leftover glaze keeps a week in the fridge; warm it to loosen.

Ingredients
Wings
- 2½ lb chicken wings, split into flats and drums
- 1 Tbsp baking powder (aluminum-free)
- 2 tsp kosher salt
- ½ tsp smoked paprika
Sticky caramel apple glaze
- 2 cups apple cider (unfiltered)
- ¾ cup packed dark brown sugar
- ¼ cup granulated sugar
- 2 Tbsp water
- 3 Tbsp unsalted butter
- 2 Tbsp apple cider vinegar
- ¼ tsp cinnamon
- Pinch cayenne
- ¾ tsp flaky salt
- ½ tsp malic acid or citric acid (for the sour green-apple bite)
Finish
- 3 packets Pop Rocks (about 1 oz)
- ¼ cup sour green apple hard candy (like Jolly Ranchers), crushed
- Optional: black sesame seeds, thin-sliced Granny Smith apple
Dip
- ½ cup sour cream mixed with 2 Tbsp blue cheese or a spoon of horseradish
Instructions
- Dry brine overnight. Pat the wings very dry. Toss with baking powder, salt and paprika. Arrange on a rack over a sheet pan and refrigerate uncovered overnight.
- Reduce the cider. Boil the apple cider in a wide pan until it's down to ½ cup and syrupy, 15–20 minutes. Set aside.
- Make the caramel. In a heavy saucepan, cook the granulated sugar and water over medium heat without stirring until deep amber, 6–8 minutes. Off the heat, carefully whisk in the reduced cider (it will bubble hard), then the brown sugar.
- Finish the glaze. Return to medium heat and simmer 3–4 minutes until it coats a spoon thickly. Whisk in butter, vinegar, cinnamon, cayenne and salt. Let cool 5 minutes, then stir in the malic acid. The glaze should be thick and tacky, like caramel sauce, not runny.
- Cook the wings. Bake at 250°F for 30 minutes, then raise to 425°F and bake 40–45 minutes, flipping once, until deeply golden and crackling. (Or fry at 375°F for 10–12 minutes.)
- Glaze. Toss the hot wings in just enough glaze to coat. Spread on a rack 2–3 minutes so the glaze sets sticky.
- Pop and serve. At the very last second, scatter the Pop Rocks and crushed sour apple candy over the wings. Add black sesame and apple slices if you like. Serve immediately with the dip so the candy is still popping at the table.
