Notes
Day before: Make gyoza, tare, ginger syrup, black sesame syrup, matcha syrup, miso caramel and sesame brittle. Salt wings uncovered and refrigerate. Make chili oil. Pickle cucumber/radish.
3 hours before: Make curry gravy base; cool and refrigerate. Prep all vegetables. Mix spicy mayo. Make cocktail syrups. Portion meats and seafood.
1 hour before: Set table and bar. Start bringing curry gravy back to temperature. Skewer yakitori. Prepare ramen toppings. Take wings out to lose the refrigerator chill.
30 minutes before: Start wings. Set up frying station for shrimp. Start heating/organizing gyoza and yakitori stations. Chill glassware.
At service: Cocktails are made in sequence. Fries and curry poutine should be assembled last-minute. Ramen is the final savory course so the broth and noodles are piping hot.
Neon rule: Keep the food dark, glossy, crispy and smoky. Keep the drinks bright, cold and aromatic. The contrast is the whole point.
