Bombay Sandwich

Mumbai's aloo masala toast: soft white bread spread with green chutney and ketchup, stuffed with a spiced mashed-potato filling and melty cheese, then griddled in butter until crisp. Makes 6.
Ingredients
Potato masala
- 4 medium potatoes, boiled, peeled and mashed
- 1 T ginger-garlic paste
- 2 green chilies, minced
- ⅓ cup cilantro, chopped
- 1 tsp ground cumin
- ½ tsp turmeric
- 1 tsp garam masala
- 1 tsp Kashmiri chili powder
- 1 tsp chaat masala
- 1 tsp amchur (dry mango powder)
- 1 tsp sandwich masala (optional)
- Kosher salt
Assembly
- 12 slices soft white sandwich bread
- Softened butter, plus more for the pan
- Green chutney (cilantro-mint)
- Ketchup
- Grated cheddar or Amul cheese (optional but recommended)
Instructions
- Mash the warm potatoes with the ginger-garlic paste, chilies, cilantro and all the spices. Season with salt; it should taste bold.
- Trim the crusts if you like and butter one side of every slice.
- Spread green chutney on 6 slices and ketchup on the other 6.
- Pile a thick layer of potato masala on each chutney slice, add cheese, and close with a ketchup slice.
- Butter the outsides and cook in a grill pan or sandwich press over medium-low, pressing gently, until golden and crisp, 2–3 minutes per side.
- Rest a minute on a rack so they stay crisp, then cut diagonally.
Plating
Serve hot with more green chutney and ketchup, and a little extra grated cheese on top the way the Mumbai stalls do.
