Catfish Kabayaki (Unagi-Style)

  • Broiler

  • Steamer


Ingredients:

  • Unagi Sauce

  • Dark brown sugar

  • Sake

  • Mirin

  • Dark Soy

  • Boneless Catfish fillet

Instructions:

  1. Make Unagi Tare,

    1. Caramelize sugar.

    2. Add sake, dark soy, mirin

    3. Leave on low for reduction.

  2. Skewer Catfish Filets

  3. Salt

  4. Grill over low smoke charcoal for around 10 minutes

  5. Steam for 5-7 minutes to release excess fat and create fluffy texture

  6. Dip or brush with Tare

  7. Return to grill for tare caramelization.
