Ingredients:
Unagi Sauce
Dark brown sugar
Sake
Mirin
Dark Soy
Boneless Catfish fillet
Instructions:
Make Unagi Tare,
Caramelize sugar.
Add sake, dark soy, mirin
Leave on low for reduction.
Skewer Catfish Filets
Salt
Grill over low smoke charcoal for around 10 minutes
Steam for 5-7 minutes to release excess fat and create fluffy texture
Dip or brush with Tare
Return to grill for tare caramelization.
