Yield: 4 4 oz servings.

Time: 3 hours

Pairing: potatoes Gratin, Hazy IPA

Ingredients:

  • 1 1/2 pound tri tip roast or steak, room temperature

  • 30 oz Cafe Rub


Instructions:

  1. Coffee Rub on the outside.

  2. Let sit in Fridge overnight on a rack to Dehydrate.

  3. Low and slow on the smoker:

  4. Take meat to 110, and have on for at least 2 hours. Smoke with Applewood

  5. High heat sear on Grill or oven to form Crunch

  6. Rest until internal reaches 130-135.

  7. Cut on Slicer for Sandwiches.
