Um... there is no cream in here. Excuse me, there is NO cream in here. WHERE THE F*** IS THE CREAM!!


Why it works: Emulsion of pasta water and cheese fats. It's Five ingredients! my favorite. Blender Parm for the win!

Yield: 2 portions.

Time: As quick as a child's prayer.

Pairing: Sautéed light proteins, Grilled foods would over power

  • Blender

  • Stock pot


Ingredients:

  1. Parmesan Reggiano

  2. 1/4 cup Salt

  3. 3 tablespoons Butter

  4. 1 tablespoon Black Pepper

  5. 4 oz. Pasta (Fettuccini, Fusilli)

  6. 2 cups pasta water

Instructions:

  1. Bring salted water to boil

  2. Blend Cheese to fluffy crumb

  3. Boil pasta to a dente

  4. reserve 2 cups pasta water

  5. put pasta back in pot, add handful of cheese, 1 tablespoons of butter, 1 pinch black pepper

  6. Fold to consistency.

  7. Continue until all cheese is used, adding water to thin out sauce.
