Grilled Pork Chops with Peaches

Equipment:

  • 12 in Cast Iron Skillet


Ingredients:

  • 2- 1 inch thick bone in pork chops

  • Peach Glaze

    • 3 ripe peaches

    • Sugar

    • Salt

    • fresh thyme

    • Corn Starch

  • Garnish

  • 1/4 cup pecans



Instructions:

  1. Cut peaches in half, remove pit, leaving skin on

  2. Seat peaches on grill or cast iron pan before.

  3. Get pork chops out to room temperature (searing when protein is a room temp ensures a even cook.)

  4. Heat cast iron to high heat.

  5. Pat chops dry, oil and season with salt and pepper right before searing.

  6. until 150-155F, Grill peaches until grill marked, then move to tray with pecans for smoking.
