Ingredients:
2- 1 inch thick bone in pork chops
Peach Glaze
3 ripe peaches
Sugar
Salt
fresh thyme
Corn Starch
Garnish
1/4 cup pecans
Instructions:
Cut peaches in half, remove pit, leaving skin on
Seat peaches on grill or cast iron pan before.
Get pork chops out to room temperature (searing when protein is a room temp ensures a even cook.)
Heat cast iron to high heat.
Pat chops dry, oil and season with salt and pepper right before searing.
until 150-155F, Grill peaches until grill marked, then move to tray with pecans for smoking.
