Ingredients:


  • 1/2 cup ground allspice

  • 1/2 cup brown sugar, packed

  • 2 bunches scallions, trimmed and roughly chopped

  • 6 to 8 cloves garlic

  • 4 to 6 Scotch bonnet or habanero peppers, seeded and cored; leave some seeds in for more heat

  • 2 tablespoons soy sauce

  • 1 tablespoon dried thyme (or 2 tablespoons fresh thyme leaves)

  • 1 teaspoon cinnamon

  • 1/2 teaspoon nutmeg

  • 1 teaspoon kosher salt, or more to taste

  • 1 teaspoon ground black pepper, or more to taste
