1/2 cup ground allspice
1/2 cup brown sugar, packed
2 bunches scallions, trimmed and roughly chopped
6 to 8 cloves garlic
4 to 6 Scotch bonnet or habanero peppers, seeded and cored; leave some seeds in for more heat
2 tablespoons soy sauce
1 tablespoon dried thyme (or 2 tablespoons fresh thyme leaves)
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 teaspoon kosher salt, or more to taste
1 teaspoon ground black pepper, or more to taste
