Description:

The gray and rocky beaches of Titlow beckon. The long reclaimed pier posts measure the year's growth in black mussels. The Narrows' Bridge silouttes the distance, as her older sister lurks beneath the surface.


Why it works: You want golden crunchy slender fries for ultimate dipping. The beer batter needs to be rich, airy and dark to compliment the fatty salmon.

  • 4 5-ounce fatty salmon fillets (Atlantic, Scottish, Steelhead, or Coho)

  • 1 12-ounce Mac and Jack's Amber beer

  • 1 cup AP Flour

  • 1 tb Salt


  • 2 2-ounce portions Kewpie Mayo Tatar Sauce

  • Lemon

  • Idaho Fries (Lard Fried)

  • Chive Vinegar (Malt Vinegar)

  • 1 tb sweet onion power (Walla Walla)
