Karikari Cheese (Izakaya Crispy Fried Cheese)
Karikari ("crispy-crunchy") cheese is an izakaya staple. Cheese is cooked until the fat renders out and it puffs into a golden, airy, shatter-crisp disc. It's served hot next to edamame and a cold drink.

One ingredient, two minutes, maximum crunch. The izakaya bar snack that disappears before your beer does.
Why It Works
Cheese is mostly fat, protein, and water. Low, steady heat drives off the water and renders out the fat, leaving a lattice of browned protein that sets hard and crisp as it cools. Mozzarella gives the airy puff and stretch, and cheddar brings color and a sharper, nuttier flavor. The microwave heats the water inside the cheese so fast that it steams and inflates the disc into a hollow, crackly shell, which is why the izakaya version looks puffed like a little bun.
Tasting Journal
Where I had it: Motsuyaki Sakaba Tonbou (もつ焼き酒場 豚坊) near Ameyoko in Ueno, Tokyo, September 2026. It was on the specials board as カリカリチーズ (¥500), served puffed and golden with salted edamame.

RECIPE CARD
Karikari Cheese (Izakaya Crispy Fried Cheese)
Yield: 2–4 discs (a snack for 2) | Time: 10 minutes
────────────────────────
Equipment
- Nonstick skillet (or microwave + parchment)
- Thin flexible spatula
- Ring mold or small bowl (optional, for shaping)
- Paper towels / wire rack
Ingredients
- 100 g low-moisture cheese, shredded or sliced: a blend of mozzarella and sharp cheddar gives the best puff and color
- Optional: pinch of shichimi togarashi or black pepper
- Optional: pinch of aonori
- To serve
- Salted edamame
- Ice-cold beer or highball
Instructions
- Skillet method: Heat a dry nonstick skillet over medium-low. Pile about 25–30 g of cheese into a tight round, about 3" across. Use a ring mold if you want a clean edge.
- Let it melt and bubble undisturbed for 4–6 minutes. The fat will pool and the bubbles will slow down as the moisture cooks out. Dab away excess fat with a paper towel.
- When the bottom is deep golden and the edges release on their own, flip and cook 1–2 minutes more to crisp the top.
- Move to a rack. It crisps fully as it cools for about 1 minute. Dust with shichimi or aonori while it's hot.
- Microwave method (puffier, like the photo): Place a single slice or a tight round of cheese on parchment. Microwave on high 1.5–2.5 minutes, watching closely, until it puffs, turns golden, and stops bubbling. Rest 1 minute to crisp.
- Serve immediately with edamame.
