Neon Pad Thai (Night Market 2077)

A cyberpunk Pad Thai from a rain-soaked noodle bar under a holo sign. Indigo butterfly-pea noodles flip to magenta at the table with a squeeze of lime, the tamarind sauce runs smoky and dark with black garlic, a squid-ink egg net drapes over the top like circuitry, and the garnish literally crackles. Serves 4.
Ingredients
Indigo noodles
- 8 oz flat rice sticks (¼-inch)
- 2 T dried butterfly pea flowers (or 4 tea bags)
- 4 cups just-boiled water
Synth tamarind sauce
- ¼ cup tamarind concentrate
- 3 T palm sugar (or light brown sugar)
- 3 T fish sauce
- 1 T Sriracha
- 2 cloves black garlic, mashed
- ½ tsp liquid smoke (or 1 tsp peaty Islay Scotch)
- 2 T tonic water (for the blacklight glow)
Squid-ink egg net
- 3 eggs
- 1 tsp squid ink
- Pinch of salt
Protein (choose one)
- 12 oz squid tubes, scored and cut into ribbons, or
- 12 head-on prawns, or
- 14 oz extra-firm tofu, cubed, pressed, glazed with 1 T gochujang and dusted with charcoal salt
Wok
- 3 T neutral oil
- 3 cloves garlic, minced
- 2 shallots, sliced
- 2 T salted radish (chai po), chopped
- 2 cups bean sprouts
- 4 scallions, cut in 2-inch pieces
Garnish "HUD"
- ¼ cup neon pickled shallots (shallots soaked in beet brine)
- ⅓ cup peanuts, crushed and tossed with togarashi and black sesame
- Pea shoots and Thai basil
- Popping candy or Szechuan buzz buttons (optional)
- Limes, cut into wedges
Instructions
- Dye the noodles: Steep the butterfly pea flowers in the hot water 5 minutes, strain, then soak the rice sticks in the warm blue tea 20–25 minutes until pliable but still firm. Drain.
- Sauce: Warm the tamarind, palm sugar, fish sauce, Sriracha and black garlic until the sugar dissolves. Off heat, stir in the liquid smoke and tonic. Taste for sweet-sour-salty balance.
- Egg net: Beat the eggs with the squid ink and salt. Heat a lightly oiled nonstick pan over medium. Dip your fingers (or a squeeze bottle) in the egg and drizzle thin crisscross lines back and forth to make a lacy black net. Cook 30 seconds, lift onto a plate and repeat to make 4.
- Protein: Get the wok smoking hot. Flash-sear the squid (60 seconds) or prawns (2 minutes) and remove. For tofu, fry until crisp, then toss in gochujang and charcoal salt.
- Wok: Add oil, garlic, shallots and salted radish and stir-fry 30 seconds. Add the noodles and ⅔ of the sauce and toss until they absorb it and turn glossy, 2–3 minutes. Add the protein back with the sprouts and scallions and toss 30 seconds more. Loosen with more sauce if needed.
- The reveal: Plate on matte black dishes, drape an egg net over each, and add the garnish HUD. Squeeze lime over the noodles at the table and watch them turn indigo to magenta.
Plating
Serve on black slate or matte black bowls with a lime wedge on top. For service, dim the room and pass a UV flashlight over the plate: the tonic in the sauce fluoresces blue. Add popping candy at the last second so it crackles at the table.
Pairings
Yuzu-lemongrass highball with a tonic float (it glows under UV too)
Tasting Journal
Event idea: Make this the centerpiece of a "Cyberpunk Night" Chef's Table, with neon lighting, synthwave on the speakers and a blacklight pass for the plates.
Why it works: Butterfly pea is a natural pH indicator, so the lime's acid shifts it from blue to magenta. Quinine in tonic water fluoresces under UV light.
