Teri-Mayo Karaage Don
A Japanese fried-chicken rice bowl: ginger-shoyu marinated karaage fried twice for crunch, tossed in a sticky teriyaki tare, and piled over short-grain rice. It's finished with a Kewpie mayo zigzag, shichimi togarashi, black sesame, and a dab of wasabi on the side.

A cyberpunk fusion rice bowl: double-fried karaage lacquered in sweet shoyu, zigzagged with Kewpie, and dusted with shichimi over rice that soaks up every drip.
Why It Works
Potato starch fries up lighter and crunchier than flour alone, and resting the coated chicken lets it hydrate into a shell that crackles. The double fry is the karaage secret: a lower first fry cooks the thigh through while staying juicy, and a short, hot second fry drives off moisture so the crust can take a sticky glaze without going soggy. Reducing the tare until syrupy means it clings in a thin lacquer instead of soaking in. Kewpie's rich, tangy egg-yolk mayo balances the sweet-salty glaze, shichimi adds a citrusy heat, and the extra drizzle of tare on the rice means the bottom of the bowl is as good as the top. For a spicier take, see the Wasabi Karaage recipe.

Equipment
- Heavy pot or wok + deep-fry thermometer
- Wire rack over a sheet pan
- Small saucepan (for tare)
- Large mixing bowl (for tossing)
- Squeeze bottle (for mayo)
Ingredients
- Karaage
- 500 g boneless skin-on chicken thighs, cut into large 2" pieces
- 25 g shoyu
- 15 g sake
- 10 g ginger, grated
- 5 g garlic, grated
- 3 g sugar
- 60 g potato starch (katakuriko), plus 15 g flour
- 1 L neutral oil, for frying
- Teriyaki tare
- 45 g shoyu
- 45 g mirin
- 30 g sake
- 20 g sugar
- Bowl
- 2 bowls steamed Japanese short-grain rice (about 400 g cooked)
- Kewpie mayonnaise, in a squeeze bottle
- Shichimi togarashi
- Black sesame seeds
- Wasabi, for the side
- Optional: shredded cabbage or scallion
Instructions
- Marinate: toss the chicken with shoyu, sake, ginger, garlic, and sugar. Marinate 30 minutes to 2 hours in the fridge.
- Make the tare: simmer the shoyu, mirin, sake, and sugar 4–5 minutes until syrupy and reduced by about a third. It should coat a spoon. Set aside.
- Coat: drain the chicken briefly, then toss in the potato starch and flour mix until evenly coated with dry, craggy patches. Rest 5 minutes so the coating hydrates.
- First fry: heat the oil to 330°F. Fry in batches for 3–4 minutes until pale golden. Rest on a rack 4 minutes; carryover heat finishes the center.
- Second fry: raise the oil to 375°F and fry again 45–60 seconds until deep golden and crackly. Drain on the rack.
- Glaze: warm the tare in a large bowl or pan, add the hot karaage, and toss quickly to lacquer. Work fast so the crust stays crisp.
- Build the bowl: pile the rice, spoon a little extra tare over it, and lay the karaage on top (slice a piece in half to show off the juicy center).
- Zigzag with Kewpie, then dust with shichimi and black sesame. Add a dab of wasabi on the side and serve immediately.
