Ingredients:

1 cup AP Flour

  • 1 Cup Corn meal

  • 2 Tablespoons Baking powder

  • 1 egg

  • 1 cup milk

  • ½ tablespoon salt

  • 1 tablespoon neutral oil

  • 1 tablespoon honey

Instructions: Preheat oven to 350 on convection.

  • Whisk AP Flour, Cornmeal, Baking Powder, salt, and sugar together

  • Stir in egg, neutral oil, and honey,

  • Add splashes of milk until the batter is the consistency of pudding.

  • Heat Cast iron pan with 1 teaspoon of oil over stove top, 

  • Add the batter to hot cast iron, hearing an audible sizzle, and move to oven for 15-20 minutes.

  • Check center with toothpick. Crumb should be cake-like, and have a nice crown
