Why it works: The rice flour keeps it crunchy and light, and since this is a french / cajun recipe, we are using a French inspired flavor of persillade with southern mayo. We are also adding green onion to the persillade for a slightly southern influence.

Ingredients:

  • 1# frog legs

  • Crystal hot sauce

  • 1 cup AP flour

  • .5 cup Rice Flour

  • 2 Table Cajun seasoning

  • 2 Eggs

  • Peanut oil

  • 1 Lemon

  • Persillade Dipping Sauce (Snail sauce)

    • Dukes mayo

    • Green Onion

    • Roasted garlic

    • Parsley

    • Lemon zest

    • Salt and Pepper


Instructions:

  1. Soak in hot sauce

  2. 3 breading process

  3. Make sauce by folding together
