Cajun potato salad

The great debate








Ingredients:

  • 5 Red potatoes

  • 1 table spoons Dijon Mustard


  • .5 cup Crawfish boil seasoning

  • 1 Lemon

  • 1 white Onions

  • 2 Eggs, separate white and yolks

  • .5 cup Blue label Mayo

  • 1 stalk Celery

  • 2 green onion


Instructions:

  1. Wash and cut red potatoes in half. Add to a large boil of crawfish boil, lemons, and onions. (If you have leftovers from a boil, use the leftover potatoes and onions.) Cook potatoes to tender

  2. Boil egg to a soft boil (7 minutes), separate whites and yolks. Cut whites into small dice

  3. Whip yolks with May, cajun seasoning, and Cajun Dijon mustard.

  4. Cut onions and celery into small dice, or microplate. Fold in with yolk mixture and potatoes. Mash with potato masher until incorporated, season to taste, garnish with green onions.
